And then, there are times when I can’t resist the allure of a sizzling chicken stir-fry. It’s not rocket science, but there’s an art to it, you know. The chicken cubes, lightly tossed in a medley of sauces, hit the wok with a sizzle that is music to my ears. And voila! An excitement-laden dish is on the table, waiting to be devoured!
On lazy weekends, chicken roasts are my go-to favorites. Smearing the whole chicken with a blend of delectable spices is a labor of love. Gather your ingredients: 500 grams of chicken breasts, one green bell pepper, one red onion, two cloves of garlic, half a teaspoon of chili flakes, two tablespoons of olive oil, salt, and pepper to taste.
Cut the chicken into bite-sized pieces, dice the bell pepper and chop the red onion and garlic.
Preheat a pan over medium heat before adding the olive oil.
Start off by sautéing the garlic until it turns golden brown.
Toss in the chopped red onion, sautéing until it becomes soft and translucent.
Next, add the diced bell pepper and continue sautéing for another minute.
Turn the heat up a notch and throw in the chicken pieces.
Cook the chicken until it’s nicely browned on all sides.
Sprinkle over the chili flakes, salt, and pepper.
Stir everything together, ensuring that the chicken and veggies are well coated with the spices.
Cover the pan and let it simmer on low heat for about ten minutes until the chicken is cooked through.
Take off the lid and give everything a good stir.
